Chicory – a forgotten old taste


Chicory is a plant in the Asteraceae family that has bright blue flowers and a long root. Chicory root is used to make a drink that resembles coffee in taste and color, but does not contain caffeine. Chicory has been popular in Europe since the Middle Ages, when coffee was an expensive and rare product.
